Forum Opening & Welcome

+ Unit I: “The Leaven Factor: Bread as a Living Symbol of Who We Are as a People” Peter Reinhart, Johnson & Wales

The word “companion” derives from two root words meaning “with” and “bread.” In other words, “one with whom we break bread.”  There is a reason why bread is a powerful universal symbol and why it has such a deep hold on our collective psyche. We’ll explore and discuss this traditional concept of connectedness during Peter’s presentation.

Longhouse Food Revival: Food, Art & Story with Molly O’Neill

LongHouse Food revivals are gatherings of thought leaders dedicated to pushing the boundaries of how food stories are told. In collaboration with Friday Arts Project, this revival brings together some great food minds to look at ethnic barbecue through photography, videography, spoken word and great food. After a mildly lubricated 90 minute discussion, we proceed to a feast by Barbecue Legend Dan The Pig Man working in consort with Fausta Salvatierra and the cooks of Cocinca Latina. Hailing from Pachuca, the capital of Mexico’s Hildago region, Salvatierra and her family serve local cognoscenti some of the best Barbacoa de Borrego north of the border.

Raise a glass. Roll up your sleeves. Grab a tortilla. Get down.
